Pancakes with Chocolate Sauce



Came up with this a few days ago, and have since made it three times! I know I know, not healthy even though it is low carb, but sometimes a girl needs her chocolate comfort food.... Like when she is about to turn 30!

Pancakes
I made these in a magic bullet, but a blender or hand mixer could do well also.

Place in blender/bowl/magic bullet:
1/2c heavy cream
1 egg
1/2 t vanilla
1/2c Carbalose
1 t baking powder

Blend until thickened. In the Bullet it takes about 4 presses of 5 seconds.

Heat non stick skillet over medium to medium high heat. Just as you would with pancakes. Grease with butter. When a few droplets of water skitters across the pan, Pour about 2 TB of batter on the center of the pan and swirl around a bit, doesn't need to touch the sides. Once bubbles appear and start to dry out gently flip to other side and cook about half the time. Until golden on both sides and cooked through. Grease pan with butter before adding batter each time.

Chocolate Sauce
In a small saucepan over low heat melt, and stir occasionally:
3 TB solid coconut oil
1 TB unsweetened cocoa powder
3 TB Butter
1 t erytrhitol

Once melted stir in:
1 dropper of Vanilla Stevia
1 t Fiberfit or DaVinci or other liquid Spelenda to taste

This sauce is great for many applications!

I opted for this instead of Birthday Cake! YUMMY!
