Low Carb/Keto Chocolate Peanut Butter Mousse
Hello again all! After that delicious and filling hash this morning I launched into writing and social networking. I ended up with a tremendous chocolate craving and a need for more fats. Grocery day isn't until Friday and we are almost out of everything, so I got creative. I want to share the result with you, it is sweet, thick and chocolatey with a hint of peanut butter.
* 4 TB Heavy Cream
* 1 cap of Torani's Caramel Sugar Free
* 1 heaping TB of unsweetened cocoa
* 1 heaping tsp of creamy peanut butter
* optional: shave a half square of 80% dark chocolate on top
Place all in a magic bullet and whir around until thick. Can also be done in a bowl with a hand mixer. I like to eat mine with a tiny drizzle of additional cream.

Married to an amazing man and into even more beautiful children. Left the WOE. Back on WOE. Left WOE. Eliana turns 8 in 22 days. Gained a lot of weight. Endometriosis. Back on WOE as of 30 January 17. 4 lbs down and normalizing bG without tons of insulin.
I do have a recipe for you today. It was delicious and well worth the work. It is the good kind of greasy, serious comfort food. I know what you are thinking, but I swear the turnips don't taste like turnips at all this way. Happy eating!

Prep Time: 5 minutes Cook Time: 10-12 minutes
Low Carb Turnip Hash
- 1/2 onion, small dice, I used yellow
- 1 medium turnip, small dice, peeled and ends sliced off
- 3 cloves garlic, minced, more or less to taste
- 1 medium jalapeƱo, small dice, deseeded if you want the flavor without extra heat
- 1/c cup diced ham
- 1/2 tsp Tony’s Creole Seasoning, more or less to taste
- salt and pepper
- 2 Tb butter
- 1 tsp bacon grease
- optional cheddar cheese, or sour cream to top
- Heat butter and bacon grease in a large non stick skillet over medium heat. Cast iron works great! Add the diced turnips and cook them until soft, about 6 minutes, stirring frequently.
- Add the onion, and garlic. Stir frequently until the turnips and onions begin to color.
- Add the jalapeƱos, ham, and seasonings, continue to stir over the heat until the onions and turnips are caramelized.
- Top as you choose and enjoy.
